Tea Brewing Calculator

Pick a tea type and your teapot size to get water temperature, leaf amount, steeping times and the number of infusions

Use the volume you actually fill, usually 100–250 ml for gongfu brewing.

These figures are common brewing guidelines, not an official standard. Water, leaf quality and personal taste all change the result, so treat the first cup as a starting point and adjust.

Frequently asked questions

Why do different teas need different water temperatures?

Green, white and yellow teas are delicate: boiling water can make them bitter or scalding-hot in aroma. Oolong, black tea and pu-erh are more tightly rolled or fermented, so they need hotter water to release flavour.

My teapot is not 150 ml. Do I need to change anything?

Yes. The leaf amount scales with the capacity at the same ratio: a 250 ml pot needs about two thirds more leaf than a 150 ml pot. Water temperature and steeping times stay the same.

Are these numbers official?

No. They are widely used starting points. Tea shops and tea masters often use slightly different figures, and the best guide is always how the cup tastes to you.
